Domino 7 server HANGS every Wednesday around 12pm

There are no tasks running at this time like compact, updall, etc.  There are some users who archive on this day at this time, but don't appear to be affecting anything. Most of the logging during this time period bewteen 11:20am and 12:20pm are lost.  Seems almost like a chunk of logging is gone.  Appears users are trying to request information during this time, session connect (multiple) and then all of a sundden we see outbound network traffic spikes almost off the charts.  The data directory is on a SAN device.  The group responsible shows no signs of trouble nor is there anything on there end running or scheduled to run at the time.  Antivirus is not scanning.  No server updates.  Any suggestions?  Thanks....
